Well if it helps any, the lycopene in tomatoes is much better absorbed by your body if the tomatoes are cooked at eaten with a little fat. Which make pizza an excellent way to eat tomatoes. :-) I could make a similar argument for sauerkraut, unfortunately most of the good stuff is killed in the canning process... If you're thinking of branching out into other vegetables I highly recommend spinach dip. After all, the sour cream has calcium in it, right? :-)
